Retail Grinding Record Keeping Rule

The Food Safety and Inspection Service (FSIS), an agency within the United States Department
of Agriculture (USDA), issued grinding record keeping requirements (80 FR 79231) in 2015.
These requirements apply to meat and poultry processing establishments and retailers, such as
yours, that grind raw beef products for sale in commerce

VT Directive 8010.3 Rev 7 Procedures For Evidence Collection Safeguarding and Disposal

This directive provides the methodologies and procedures that VAAFM personnel in the Meat Inspection Section (collectively referred to in this directive as program employees) are to apply when collecting, safeguarding, and disposing of evidence in the performance of surveillance, investigations, and other activities under the Federal Meat Inspection Act, (FMIA), the Poultry Products Inspection Act (PPIA),– collectively referred to as ―the Acts‖ – related laws and regulations, and 6 V.S.A Chapter 204. Additional information is provided related to photography collection and authority, using smartphones to collect evidence, collecting investigative samples using the Public Health Information System (PHIS), and to make other clarifications.

VT Directive 8010.1 Revision 6 Methodology for Conducting In-Commerce Surveillance

This directive provides instructions to Compliance and Enforcement Officers and Investigators on the methods for surveillance of persons, firms, and corporations operating in-commerce who are subject to the provisions of the Federal Meat Inspection Act (FMIA), the Poultry Products Inspection Act (PPIA), Humane Methods of Slaughter Act (HMSA) (the Acts) Title 6 Chapter 204: Preparation of Livestock and Poultry Products, and related laws and regulations.
