Maple Drizzled Apple Muffins
Makes 12 medium muffins.

Ingredients:
- 1 1/3 c, flour
- 1 c. oats, quick or old-fashioned
- ½ c. sugar
- 1 tbsp. baking powder
- 1½ tsp. cinnamon
- ½ c. milk
- 1/3 c. vegetable oil
- ¼ c. maple syrup
- 1 egg, slightly beaten
- 1 c. chopped apple
- 3 tbsp. powdered sugar
- 1 tbsp. maple syrup
Directions:
- Heat oven to 400.
- Line 12 medium muffin cups or grease tins.
- Combine first five ingredients, mix well.
- In a small bowl, mix milk, oil, syrup and egg.
- Add to the dry ingredients, mixing just until moist.
- Gently stir in apples.
- Fill muffin cups almost full.
- Bake 20-25 minutes.
- Cool slightly, mix powdered sugar and maple syrup and drizzle across tops of muffins.
Tip: To make these muffins low in fat, substitute unsweetened applesauce for oil, 2 egg whites for the 1 egg, and skim milk for milk. The glaze is optional.
