Recipe: Maple Drizzled Apple Muffins

Maple Drizzled Apple Muffins 

Makes 12 medium muffins.

Ingredients:

  • 1 1/3 c, flour
  • 1 c. oats, quick or old-fashioned
  • ½ c. sugar
  • 1 tbsp. baking powder
  • 1½ tsp. cinnamon
  • ½ c. milk
  • 1/3 c. vegetable oil
  • ¼ c. maple syrup
  • 1 egg, slightly beaten
  • 1 c. chopped apple
  • 3 tbsp. powdered sugar
  • 1 tbsp. maple syrup

Directions:

  • Heat oven to 400. 
  • Line 12 medium muffin cups or grease tins. 
  • Combine first five ingredients, mix well. 
  • In a small bowl, mix milk, oil, syrup and egg. 
  • Add to the dry ingredients, mixing just until moist. 
  • Gently stir in apples. 
  • Fill muffin cups almost full. 
  • Bake 20-25 minutes. 
  • Cool slightly, mix powdered sugar and maple syrup and drizzle across tops of muffins.

Tip:  To make these muffins low in fat, substitute unsweetened applesauce for oil, 2 egg whites for the 1 egg, and skim milk for milk.  The glaze is optional.
