Baked Cottage Cheese Eggs

 

Ingredients:

  • 6 large eggs
  • 2 cups Cottage Cheese (we used 4%)
  • 1 cup grated Sharp Cheddar Cheese
  • Salt & Pepper - to taste

Make it your own! Optional add-ins: Chopped spinach, bell peppers, mushrooms, broccoli, bacon, or ham to name just a few.

Directions:

  • Preheat oven to 375°F. Lightly grease a medium-sized baking dish with butter or cooking spray to avoid sticking. (We used a 9.5” glass pie plate.)
  • In a large mixing bowl, combine first three ingredients. Mix thoroughly until all the ingredients are well-blended, and the cheese is evenly distributed. Season the mixture with salt and pepper. Feel free to add other seasonings like garlic powder, onion powder, or fresh herbs. If you’re feeling creative, toss in some veggies like spinach or bell peppers, or protein like bacon or ham.
  • Pour the mixture into the greased baking dish and spread it evenly. Bake for 25–30 minutes or until the top is golden brown. To check for doneness, insert a knife into the center; if it comes out clean, your Baked Cottage Cheese Eggs are ready!
  • You can store leftovers in an airtight container in the refrigerator for up to 3 days.
