Scotch Duck Egg

Ingredients: 1 duck egg, 1 chicken egg, ¼ cup flour, ¼ cup ground/minced salami, ½ cup panko bread crumbs, 1T white vinegar, ½ cup canola oil

Poach duck egg in boiling water with a splash of white vinegar, until egg whites are cooked but yolk is still runny. Should be springy but firm when gently squeezed

Place egg in ice bath and peel

Mince salami very finely

Beat 1 chicken egg and combine with ¼ cup flour and minced salami

Coat peeled and poached duck egg liberally with egg and salami mixture, then dredge in panko until fully coated

Pan fry duck egg in hot canola oil, turning until panko is golden brown all around.

Season with salt to taste, garnish with chopped parsley
