Ingredients
4 whole wheat tortillas
4 large eggs
½ cup reduced fat milk
1 cup vegetables of choice (broccoli & onion used here)
4 large slices or 8 small slices of ham or turkey
½ cup Vermont cheddar cheese
Instructions
- In a bowl, whisk together eggs, milk, salt, pepper, and any veggies of choice.
- Heat a nonstick pan to medium heat. Pour in egg mixture and scramble.
- Lay out 4 whole grain tortillas. Lay down slices of chosen meat. Divide the egg mixture over the 4 tortillas. Top with shredded Vermont cheddar cheese. Fold in the ends of the tortilla and roll it up.
- Either eat immediately or wrap burritos individually in cellophane and tinfoil. Unwrap and heat in microwave or toaster oven before serving.
