Breakfast Roll-Ups

Ingredients

4 whole wheat tortillas

4 large eggs

½ cup reduced fat milk

1 cup vegetables of choice (broccoli & onion used here)

4 large slices or 8 small slices of ham or turkey

½ cup Vermont cheddar cheese

 

Instructions

  1. In a bowl, whisk together eggs, milk, salt, pepper, and any veggies of choice.
  2. Heat a nonstick pan to medium heat. Pour in egg mixture and scramble.
  3. Lay out 4 whole grain tortillas. Lay down slices of chosen meat. Divide the egg mixture over the 4 tortillas. Top with shredded Vermont cheddar cheese. Fold in the ends of the tortilla and roll it up.
  4. Either eat immediately or wrap burritos individually in cellophane and tinfoil. Unwrap and heat in microwave or toaster oven before serving.
